Almost always a time zone question. Sunfold shows each location's times in that location's own time zone, not yours — so a saved city three zones away will read differently from your watch, on purpose. If the times are wrong for the city you are standing in, check that iOS has your location and time zone right in Settings.
Location access may be off. Open Settings → Sunfold → Location and choose While Using the App. Sunfold still works without it — it falls back to a default location, and you can add any city by name.
City search goes through Apple's geocoder, so it needs a network connection. Sunfold also discards any result whose time zone it cannot determine, because a city stored with the wrong zone would show plausible times that are hours out. Try the city with its country, for example Valencia, Spain.
Far enough north or south, at the right time of year, some solar events genuinely do not happen — the sun may never rise, never set, or never drop far enough below the horizon for blue hour. Sunfold shows those days as they are rather than inventing a time.
From your coordinates, on your device, using standard solar position astronomy. Golden hour is the sun between 6° above and 4° below the horizon; blue hour runs from 4° to 6° below. Nothing is fetched from a weather or forecast service — these are the geometric times, not a prediction of how good the light will look.
